Rice Paper Dumplings
INGREDIENTS :
80g soft tofu
100g shredded cabbage
25g carrot, grated
1 spring onion, chopped
1/2 tbsp. sesame oil
1/2 tbsp. soy sauce
2 tbsp garlic & ginger paste
Salt & Pepper
12 round rice sheets (22cm)
Soybean oil
For the Sauce
5 tbsp soy sauce
1 tbsp rice vinegar
A few drops of chilli oil
EXECUTION:
1. Put all the filling ingredients in a bowl and mix until they are homogeneous.
2. Place a sheet of rice in a plate with lukewarm water, leave it for 5-10". Then put it on a wooden surface.
3. Place 2 tbsp. filling in the middle, fold the bottom, then the right and left sides, then roll up until closed. To make sure that it will not break during cooking and to have a nicer texture, repeat the process, wrapping another sheet.
4. On medium to high heat, add a little oil to cover the pan. Cook the dumplings on each side until golden - about 2'-5'. Remove from heat, garnish with spring onion and serve with soy sauce, rice vinegar and a little chilli oil as a dip!
