250g sweet potato noodles

200ml Japchae sauce

1 carrot in thin strips

1 onion in thin strips

1 red pepper in thin strips

1 zucchini in thin strips

1 handful of spinach

3 spring onions

3 garlic mashed

6 shiitake mushrooms in strips

2 eggs

1 tsp sesame

1 tbsp sunflower oil or rice oil


1. Prepare the noodles according to the packaging instructions.

2. Heat 1 tbsp sunflower oil in a pan and fry the garlic until golde. Add pepper, carrot, onion, zucchini and spinach and continue stir-frying for a few more minutes, until the vegetables are slightly soft. Then add the Shitake mushrooms and the spring onions.

3. In a small bowl, beat the eggs, throw them in a pan and make an omelette. Then cut it into strips and set aside.

4. Pour the sauce over the vegetables and mix well.

5. Add the noodles and continue stirring for a few minutes.

6. Then remove from the heat, and garnish with sesame oil, sesame seeds, add the omelette and serve!
