Szechuan Hot & Sour Soup



1 packet Szechuan Hot & Sour Soup Spice Paste

1 tbsp vegetable oil

100g (3.5 oz) boneless chicken breast meat, cut into thin strips


For a vegetarian soup, use 225gr  tofu and  225gr shiitake mushrooms 

4 cups (880 ml) water or chicken broth (unsalted)

70g (2.5 oz) mixed vegetables, finely chopped

2 tbsp cornstarch

2 tbsp water

1 tsp sesame oil

1 tsp chili garlic sauce

1 egg, beaten

Chopped spring onions as garnish

Salt & Pepper


1. Heat oil in sauce pan on medium heat. Add meat, stir-fry for 1 minute.

2. Add water or chicken broth and spice paste, stir well and bring to boil. Add mixed vegetables and prepared mushrooms.

3. In  a bowl mix corn starch with 2 tbsp water until smooth, add into the soup. Simmer for 3 minutes.

4. Gradually stir in egg while still stirring the soup.

5. Stir in the tofu, half of the green onions, and sesame oil. 

6. If you’d like a spicier soup, add in chili garlic sauce.

7. Garnish, add salt and pepper if desired and serve hot!
